During the event, panelists will examine how improved food composition data can combine with better information and tools for food choice and preparation to improve flavor, nutrition, and health.
In particular, Deborah McGuinness will tell us about FoodKG, an open-source suite of tools for discovering and organizing diet-related knowledge into a knowledge graph for food recommendations. Aifric O'Sullivan will highlight nutritional phenotyping and share how she uses metabolomics and other strategies to better understand individual response to diet and lifestyle, and their impacts on growth, metabolism, and health. Robert Lustig, a pediatric neuroendocrinologist, will discuss how medicine for chronic diseases treat symptoms, not the disease itself, suggesting that most chronic diseases are not “druggable,” but rather “foodable”, as portrayed in his new book “Metabolical: The Lure and the Lies of Processed Food, Nutrition, and Modern Medicine”
They will discuss the future of food where consumers who want to eat healthily will be able to utilize next-gen AI-driven integrated food suggestion services that encompass food composition, recipes, and personal profiles for improved health outcomes.
